I first came across Masala Chai while traveling in India a number of years ago. It can best be described as tea mixed with various spices. When I started looking for a way of making my own Masala Chai I found that as with a lot of other such foods and drinks, there seem to be as many recipies as people who enjoy it. So I thought it might be an idea to collect some here.

Alex's Spicey Chai

A recipe I developed from a number of suggestions I found. This is a very spicey, full flavoured masala chai. These amounts will make about 6 cups of chai depending on strength. To increase quantity multiply ingredients proportionally.

Ingredients
  • 6 pods of cardamom
  • 3 pepper corns
  • 1 inch stick of cinnamon
  • 12 cloves
  • 3 tea-spoons orange pekoe tea

Preparation
  1. Crush all ingredients except the tea in a pestle and mortar (a coffee grinder might work also, but i've never tried). I find it best to crush one ingredient, then add the second and crush, then the third etc.
  2. Put the result into a storage jar.
  3. Add the orange pekoe tea and shake well to mix.

To make the chai:
  1. Put about half a table spoon of the mixture into a tea infuser
  2. Add this to mug of boiling water. Leave for a while to infuse
  3. Add milk and sugar to taste
  4. Enjoy :)

Sam's Chai

Sam sent me a much simpler recipe for what she's always known as masala chai. There are only 2 ingredients, and it's very quick and easy to make.

Ingredients
  • Fresh ginger (or ground packet ginger if you don't have fresh)
  • Loose leaf tea
To make the chai:
  1. Pour half a glass of water into a pan
  2. Peel and slice the ginger and add to the pan with some sugar and loose leaf tea
  3. Let that boil and then add 2 cups of milk to the pan and let it boil.
  4. Once it has fully boiled over then let it simmer for a bit and then strain it into the cups
